Most alcohol-free wine starts the wrong way — with grape juice trying to become something else. We start with real, classically made wine from Castile, and dealcoholise at the end. The order is what earned the White a 95-point Gold at the IWSC.

Here is where most alcohol-free wines die. We use a gentle low-temperature, low-pressure process — the wine never sees more than ~30ºC. Alcohol is separated along with the aromatic volatiles, which are reserved and added back. The structure is preserved, the ABV drops below 0.5%.
Body, mouthfeel and acidity are adjusted so the wine reads as wine — not juice, not tea, not water. A light addition of grape must for sugar balance. No flavourings, no colourants, no synthetic aromas. Ever.

La Mancha is the largest contiguous vineyard area in the world — 460,000 hectares of high-altitude plateau in the centre of Spain. Airén and Tempranillo are native to the region; both ripen under intense, dry continental sun with cool nights that preserve acidity.
For a wine that will have its alcohol removed, the raw material must carry an excess of flavour and structure — otherwise there is nothing left after dealcoholisation. La Mancha grapes, grown at altitude, carry that excess naturally.
Our partner winery in Villarrobledo has been making wine for three generations. They handle the vinification; our winemaking team specifies the dealcoholisation and the final balancing. One side of the Atlantic, 2,800 hours of sun a year, zero compromises.
